In Mediterranean cuisine – with a swordfish.

Kadarka is an old Pannonian black variety originating from Skadar Lake. In the 19th century, it was one of the leading varieties of Vojvodina and Slavonia until the middle of the 20th century. Then it disappeared under the onslaught of international varieties but returned to us with the Croatian Tonković family in the north of Bačka, which produces excellent wines - Rosé, Fantazija, and Rhapsody.

In the Zadar restaurant Kornat, imaginative chefs Damir Stoiljković and Stefan Stevanoski combined Kadarka Tonković with Dalmatian delicacies, and the most exciting dishes were with the swordfish. With Kadarka Tonković Fantazija 2012, they made a pasta carbonara with a swordfish, and with Kadarka Tonković Rhapsody in 2013, they made a Dalmatian saber with spicy flavored polenta.
